    Mushroom Potatoes

    Ingredients and Materials:

    Red potatoes (unpeeled)
    Biscuit cutter
    Sharp knife
    Oil or butter (your choice)

    Preparation:

    To make a "mushroom" potato, first push the smallest nested biscuit cutter into the bottom of an unpeeled red potato.

    With a sharp knife, cut the potato in the center until you hit the biscuit cutter, then carve all the way around (figure A).

    Stick your thumb inside the biscuit cutter and push until the mushroom potato comes out (figure B).

    Toss the mushroom potatoes with a little oil or butter and bake at 350 degrees for about 30 minutes, until they are brown and tender.


    Onion Flower

    Ingredients and Materials:

    Whole onion
    Sharp knife
    Vegetable spray or butter

    Preparation:

    Slice the top and bottom off an onion to keep it level, then peel the onion.

    With a knife, slice about 2/3 of the way down the onion, making cuts about 1/4" apart.

    Turn the onion and slice at a 45-degree angle (not straight across) about 2/3 of the way down (figure C). (You're creating little diamonds.)

    Spray with vegetable spray (or you can use butter) and bake at 350 degrees for about 30 minutes. Garnish with lettuce.


    Sweet-Potato Rosettes

    Ingredients and materials:

    Can of sweet potatoes
    Mixing bowl
    Egg
    Plastic pastry bag

    Preparation:

    Drain sweet potatoes and place in a mixing bowl.

    Add an egg and puree the sweet potatoes until smooth. Place the mixture in a plastic pastry bag and twist the top.

    While squeezing from the top of the bag and guiding with the bottom, create a rosette (figure D)

    Bake at 350 degrees for about 30 minutes.
