    Black Bean Chicken Chili

    Ingredients:

    1 green pepper, chopped
    1 red pepper, chopped
    4 Tbs. butter
    1 large onion, chopped
    4 tsp. minced garlic
    1 tsp. salt
    1 tsp. dried oregano
    1 Tbs. chili powder
    1/2 tsp. cumin
    1/2 tsp. crushed red pepper
    Dash cayenne pepper
    1 large or 2 small chickens, boned and cubed
    Four 16-oz. cans black beans
    Two 16-oz. cans Mexican-style stewed tomatoes
    One 8-oz. can tomato sauce
    One 6-oz. can tomato paste

    Preparation:

    Melt 4 tablespoons butter in a large Dutch oven. Add chopped bell peppers and sliced onion and saute for approximately 10 minutes, until everything is tender. Add minced garlic, salt, oregano, chili powder, cumin, crushed red pepper and a dash of cayenne pepper, stirring all ingredients together.

    Stir chicken cubes into pepper and onion mixture. Add black beans, stewed tomatoes, tomato sauce and tomato paste and bring to a boil. Reduce heat and simmer, uncovered, for approximately 30 minutes, stirring occasionally.
