    This low-fat version of an Italian classic has been trimmed down to 332 calories per serving and only 11 grams of fat.

    Q: Fettuccine Alfredo is one of my favorite meals. I just don't see any way to cut the fat and keep the taste. But I'm wondering if you'll give it a try?

    A: (Tim Harlan, M.D. -- aka "Dr. Gourmet") I believe that food can be enjoyable, while still being healthy. While the average plate of fettuccine has an average of 33 grams of fat, the recipe can be adjusted so that only 11 grams of fat remain.

    Ingredients:

    Teaspoon of olive oil to coat the pan
    2 cloves garlic, minced
    2 tsp. flour
    2/4 cup 2 % milk
    1 ounce goat cheese
    1 ounce freshly grated parmesan
    4 ounces fettucine

    1. Heat oil in sauce pan and add garlic. Cook garlic slowly in the oil, avoiding browning and overcooking.

    2. Slowly dd flour to oil and garlic to make a roux, and cook for approximately one minute.

    3. Slowly add milk. Whisk the milk, stirring constantly to prevent lumping. Blend in all milk until a smooth sauce is achieved.

    4. Add goat cheese and blend until smooth. Repeat with parmesan.

    5. Cook fettuccine al dente style (until just tender). Drain and add to the alfredo sauce.
