Ingredients: 1 angel food cake (large bundt size) Ingredients for the Sherry Custard: 1-1/2 tsp. gelatin (half of package) 1/4 cup warm water 2 egg yolks 1/4 cup sugar 1/4 cup good sherry 2 Tbs. water 1 cup heavy cream 2 Tbs. sugar 2 tsp. vanilla Ingredients for the Topping: 1 cup heavy cream, whipped 1 pint fresh berries Preparation: In a small bowl, sprinkle 1-1/2 teaspoons of gelatin over 1/4 cup of warm water and set aside. Beat 2 egg yolks until they pale and thicken, then stir in the 1/4 cup good sherry, 1/4 cup sugar, and 2 tablespoons of water and pour into a medium saucepan. Over medium heat, stir the custard constantly until large bubbles appear on the surface and custard is thick. Whisk in the gelatin mixture and continue to whisk vigorously until the gelatin is completely dissolved. Place the pan over a bowl filled with ice and stir until the mixture is cool but not set up. In a separate bowl, whip 1 cup heavy cream until very stiff, then add 2 tablespoons of sugar and the 2 teaspoons of vanilla. Fold into the cooled custard. Cut the cake into bite size pieces. In a large bowl, fold the custard into the cake pieces. Finally spoon the cake into an 8-inch springform pan. Refrigerate at least 2 hours to set. Next, remove the cake from the pan onto a serving plate. Frost the cake with 1 cup of whipped heavy cream and serve with fresh berries. Serves: 12-20 Chef's Note: Notice that the whipped cream has no sugar added. The cake is very sweet and the fresh whipped heavy cream compliments the cake and berries.
