    Don't worry if a waffle is less than perfect-looking -- chances are, it will still taste great!

    Q: What's a good, easy waffle recipe that I can make for my whole family?

    A: Here's a simple recipe for homemade waffles that will stand head and shoulders above the store-bought, frozen kind.

    Ingredients:

    2 cups all-purpose flour
    2 tsp. baking powder
    1 tsp. salt
    2 tsp. sugar
    2 cups milk (whole or 2 percent, depending on preference)
    2 eggs, separated
    1 Tbs. butter, melted

    Preparation:

    1. Pre-heat waffle-maker and oil grates lightly with salad oil.

    2. Sift dry ingredients together in a bowl.

    3. Separate the two eggs, then add egg yolks, milk and the melted butter to the dry ingredients and beat together thoroughly.

    4. In a separate bowl, beat egg whites until stiff.

    5. Stir in about 1/4 of the whites into the batter and then fold in the remaining whites using a gentle folding method.

    6. Pour 1 cup of batter onto lower grates and close the lid and cook for about 1 1/2 minutes.

    7. Remove waffle and top with whipped butter and warm maple syrup or your favorite topping.

    Yield: 12 waffles.



    Q: How can I make my waffles come out fluffy rather than flat?

    A: There are two good techniques for ensuring that your waffles come out light and fluffy:

    1. Add some baking powder to the dry ingredients, as specified above. When baking powder reacts with the liquids during the cooking process, it forms carbon dioxide bubbles, which result in lighter, fluffier waffles.

    2. Another technique for fluffy waffles is to beat some egg whites and fold them into the waffle batter. Use the egg whites from the eggs that you separated earlier, and mix them for about two minutes using an electric mixer -- until they are firm and frothy. The whipped egg whites can then be added to the batter just before the waffles are baked.

    Q: How do I keep my waffles from sticking to the waffle iron?

    A: You can take either if the following two steps to prevent waffles from sticking.

    • Make certain that the waffle iron is completely clean before using it.

    • Brush a little salad oil onto the grates of the waffle iron. As an option, you can use some nonstick cooking spray on your iron.

      Tip: Make certain to brush oil onto the top surface as well as the bottom of the iron. Forgetting to oil the top of the iron is one of the most common mistakes when cooking waffles.

    Now that the waffle iron is clean, oiled and hot, it's time to pour the waffle batter.

    1. With the ingredients well mixed, ladle the batter onto the iron in an X to get good coverage and even spread when the lid is closed.

    2. Close the lid and allow the waffles to cook until done.

    3. When the waffles are done, carefully remove them from the iron. They're now ready to serve with whipped butter and your favorite toppings -- warmed maple syrup, fruit toppings, or powdered sugar.

    Tip: When you're making waffles for a large group, keep the waffles warm until you're ready to serve them. As the newly made waffles are removed from the iron, place them in an oven-safe pan and into an oven preheated to about 140 degrees. Place a moist towel over the waffles to keep them from drying out in the oven.
